An Evening @ Taiping Lake Garden

Date: 20th July 2013

Last Friday, we went back to Taiping to visit Nico. He needed to remove his stitch on Saturday at hospital. We went to the hospital early in the morning for the procedure to be done. After spent half a day at the hospital, we went back home to rest. A very tired day.... After a good, long afternoon nap, we decided to bring the boys to the Taiping Lake Garden for a short walk.

~ Boomerang + Tricycle + Ball + Picnic Basket + A short evening ~

It will come to a day when Mummy is not able to catch up with the boys anymore... Will they hold up my hands to walk together with me...? Hehe ~

Nico and Stitch!

A week has passed…. Today Nico needs to go to the hospital to remove the stitches. Mummy feels so bad that I cannot be there for him. Hope everything went smoothly for Nico. Now with an extra scar above the right eye, this makes Nico a more macho baby boy already!

Date: 8 July 2013

Around 11pm, we received a call from FIL. He made the call from the hospital. He informed us that Nico knocked on a table and cried so hard. It was quite a long cut and lost some blood. He sent Nico to hospital for immediate treatment but the nurses at the emergency ward there insisted to stitch up the cut for Nico. My PIL couldn't decide on this and they called us to ask for our opinions. After some explanations from the nurse, they cleaned up the wound for Nico and then Nico was back to house for resting.

We decided to travel back to Taiping to see Nico's conditions. Since we are heading back home, so PIL decided to let us bring Nico back to the hospital on the next day ourselves to seek the advice from the doctor whether to stitch up the wound or not.

I wanted to go back on the night itself, but Hubby wouldn't let. It was already so late and even we travelled back on the spot also couldn't do anything at all. He said might as well let Nico rested a night after a big cry!

So early the next morning, after woke up Kimi, we drove back to Taiping. When we reached, Nico was still sleeping. He heard our voices and jumped out from his bed. Seeing him running out from the bedroom with a plaster stick on his eye and some blood stains on it, IT REALLY HURT ME! So, so, so, HEARTACHE!  I hold back my tears while I hug Nico on my arms. After changed him, we sent him to the hospital. He needed to fast for 6 hours before going in for the stitch. MIL fed him around 7am that morning. He was scheduled to be in the operation theatre at 1pm.

After consulting the doctor and made the necessary admission procedures, we waited in the ward. Nico was still as active. Ran in and out while waiting for his turns.

At 1pm, Mummy accompanied Nico to go into the operation theatre. It was such an eye opening for me. The room was so much equipped compare my delivery ward last time. Two doctors and I think four nurses were in there. One doctor was for the stitching and one was the anesthetist. After stayed a while with Nico in the operation theatre, I was called to go outside to wait for him.

With a heavy heart, I left Nico with the doctors and nurses in the room. It was quite a quick procedure. I think not even half an hour (perhaps 15 mins or so), I could hear Nico's crying out loud from outside, and then followed by doctor appearance to inform me that everything was just fine. The wound was quite a long one, so he did 5 stitches for Nico. I think the anesthetic that they put on Nico was a very mild one. He woke up immediately after the stitch procedure was done. He cried so loud for a long time, perhaps because of the pain, or maybe he was too hungry. After settled him down, we went back to the ward for Nico to rest.

A day which looked like a nightmare to me seemed to be better after Nico stood up to play again with Kimi in the hospital. Thank God that he almost forgot about his pains on the right eye and can be back to his usual naughty and active mode again!

Nico back @ home ~

Mummy shall see you again on this coming weekend! Can't wait for it ~ Hugs... Hugs!

Chocolate Cupcakes

Kimi said he wanted to eat colourful 'Chocolate Cake'. The lazy Mummy lazy to make separate icing for the cake topping, so I decided to sprinkle some colourful sugarballs on top of the chocolate cake to make it looked colourful. Hope Kimi will like it!

Recipe:
100g Butter, softened
200g Sugar (I used Icing Sugar)
2 Eggs
3/4 tsp Vanilla essence
125ml cup milk (I replaced with Chocolate Milk)
1 tsp Baking soda
1/2 cup Boiling water (with 1 tsp Nescafe Classic Instant Coffee powder)
200g Flour
1/4 tsp Salt
3 tsp Baking powder
40g Cocoa powder

*Note: I change the coffee powder with Milo powder so that Kimi can eat the cake without caffeine.

Methods:
1) Sift flour, salt, baking powder and cocoa powder in bowl. Dissolve baking soda in milk.
2) Cream butter and sugar until light. Add essence and eggs, continue beating.
3) Add in the rest of the ingredients (milk, milo liquid and flour ingredients), beat till smooth.
4) Spoon batter into greased paper cases to 3/4 full.
5) Bake in a preheated oven at 150C for about 25 minutes or until skewer inserted into the center of the cake comes out clean.
6) Leave to cool on rack.

I adjusted a little bit from the original recipe to fit into Kimi's requirements :)

Ayam Pongteh

Date: 4th July 2013

Last Thursday, while figuring what to cook for dinner, I suddenly think of eating 'Ayam Pongteh'. I searched for the recipe online and found that the ingredients needed were quite simple. The methods to cook it also not difficult. Nothing much need to prepare as the I had all the ingredients needed back at home.

I amended a little bit from the original recipe which I had it with me to fit into my our servings for four persons at home.

Recipe:
1 x Red Onion
4-5 cloves of Garlic
1 Tbsp x 'Tau Cheong' Paste (Salted Soybean)
5 pcs of Mushrooms (Soaked in water)
2 x Potatoes (Cut into cubes)
1 x Carrot (Cut into cubes)
1-2 Tbsp x Dark Soy Sauce
1 Tbsp x Brown Sugar
Chicken Breast (I chose chicken breast so that is easier for Kimi to eat)
2-3 bowls of water

Methods:
1) Heat oil over medium heat, add in onion, garlic and 'tau cheong' paste and fry for about 2-3 minutes, making sure not to burn the paste.
2) Add in sugar and dark soy sauce.
3) Stir fried chicken breast, potatoes and carrots with items (1) & (2).
4) Add in water. Bring to a boil.
5) When the water boils, reduce the heat and simmer the chicken. Stir occasionally for about half an hour or until the potatoes and carrots are soft.
6) Taste the sauce. If it is not salty, perhaps can add in a little bit of light soy sauce to taste.
But I didn't add it as I do not want it to be too salty for Kimi to eat.
7) Finally, garnish with spring onions (own preference)

This dish, I personally find it not difficult to prepare and quite delicious too! But it takes some time to be ready and be served. However, it is a worth try ~ Yummy!

Oreo Condensed Milk Mini Cheesecake

Nothing much to do on a Friday night, supposed to go back Taiping to visit Nico, but might need to postpone the trip. So I have decided to bake! I have this cheesecake recipe with me for some time but has not been able to try it out. I couldn't recall where I got this recipe from, but I learnt it from a blog, if not mistaken…

Recipe:
250 gm cream cheese
150gm sweetened condensed milk
[However, I only put in 100gm to make it not too sweet]
2 eggs, separated
1 teaspoon of cream of tartar
1 tablespoon of brown sugar
1 tube of Oreo

Methods:
1) Separate the Oreo biscuits and leave only 12 pieces without cream.
2) Beat the rest of the biscuits together with the filling in a food processor.
3) Place 1 teaspoon of Oreo crumb onto the paper cups, lightly press the crumbs to flatten.

4) Beat the eggs white, add in cream of tartar, then continue to beat. Add in sugar and beat till stiff. Set aside.
5) Beat the cream cheese on low speed until smooth (for 1 or 2 minutes). Add in condensed milk and egg yolks. Beat on low speed for one more minute. Fold in the egg whites.
6) Spoon (Item 5) into the prepared paper cups.

7) Top with an Oreo biscuit.

You can break it and put at anywhere you like. But the lazy me chose the easiest way to do which is to just put the whole biscuit on top.

8) Bake for 20 minutes in a waterbath.
[Preheat the oven at 150C and boil water after this]
9) Leave to cool in oven, door ajar. Cool completely before chilling.
10) Best to chill for 3 hours or more before serving.

Finally, the mini cheesecake is ready to be served!

However, this time, I think I had deflated the egg whites, hence made the outcome of the cake looked short. Not so successful this round. Hope I can improve it to bake it better and look nicer on the next round.

But most of all, hope Kimi and Nico will like it! Hehe :)
