Cashew Nut Cookies

This year CNY, I am thinking of trying out to bake some CNY cookies myself. Searched on the Internet and decided to try out one of the recipes on 'Cashew Nut Cookies' since I have some raw cashew nuts at home. I might as well make use of them. Hehe :)

~ Cashew Nut Cookies ~

Ingredients:-
125g Butter
90g Icing Sugar
1/2 tsp Sodium Bicarbonate
210g Flour
1/2 tbsp Milk Powder
1/4 tsp Salt
100g Ground roasted cashew nuts
1/2 Egg
1tsp Vanilla essence

Cashew Nuts (Halves it and bake-half cooked for topping)
Extra egg for egg wash
Preheat oven at 170 degree C

Note:
I cut half of the ingredients measurements from the original recipe to test for this very first time.

Methods:
1) Sift flour, milk powder, soda powder and salt together. Set aside.


2) Ground roasted cashew nuts.


3) Cream butter and icing sugar till light and fluffy.
4) Add eggs and vanilla essence till mix well.
5) In low speed, add sifted flours and ground cashew nut till a soft dough.
6) Chill till firm.



7) Roll the dough to the same thickness. Use a cookie mould to shape the dough. I choose a flower shape for this time. Line the cut dough on a baking tray.
8) Place cashew nut on it and slightly press.



9) Egg wash to seal the nut and dough gap so that the cashew nut won't drop out easily.


10) Bake at 170 degree C for around 15-20 minutes.

Dang.... Dang.... My end results fresh from the oven…


11) Set aside for cooling before packaging. Hehehe :) Can’t wait to taste it myself!!


With the amount of ingredients as above, I can make one and a half container size as below.


I packed one container nicely to keep for Chinese New Year, and the balance of the cookies.... Well, Kimi ate some of it and of course I bring them to the office to share with my lovely colleagues on the next day. I personally quite like the outcome of this recipe. Hehe.... the taste of it really not bad :) Really worth a try ~

Nico's 11 Months of Memory Lane

Today nothing much to do at home. Alone with Kimi so I have some time for myself. I browsed through all the photos which I transferred them to my laptop recently. The photos are all my sweet memories with my loved ones.

I decided to walk down the memory lane and chose some of Nico’s monthly photos since he was born until he was 11 months’ old to post up in my blog ~ Some photos were captured by camera and some photos were shot by my smart phone. I tried to choose those which were clearer to view. Time flies really fast!

I have to admit that the time I spend for Nico is not as much as I spent on Kimi at this age of time. Kids grow up just too fast... The baby which I hold on him in my arms at the hospital on December 2011 has now slowly turns into a toddler.

Nico boy, Mummy wishes to spend more time on you and I hope and am trying my very best to fulfill this soon. Daddy, Mummy and Kimi gor-gor love you as always :) Missing you so much...

CNY Shopping @ Petaling Street

Yesterday went to Petaling Street to feel some of the CNY mood around :)

As promised, I brought Kimi to take public transport to go Petaling Street. This time we took LRT to go. We went to the 'Sin Sze Ya Temple' close to Central Market for year end prayers before we started our CNY shopping at the Petaling Street.

Kimi in the LRT with super excited mood! He keeps on telling me that he is sitting on a 'Choo-Choo-Train' and he wants to sit longer in it. Hehe …..


@ Petaling Street ~ Full of Chinese New Year decorations and shops selling CNY things... Kimi walked until very tired, so his Pa-pa carried him on his shoulders so that Kimi could see more things :)

 
My achievements for the day ~ As we took public transport to go Petaling Street, so didn't manage to grab some flowers back as Hubby said too difficult to take in LRT. Perhaps I will replenish some flowers in my next CNY shopping :)
 
 
 
 
Although it was a very tiring trip walking under the hot sun, we enjoyed it a lot especially Kimi and Mummy! Looks like CNY is just around the corner :)

I wish to be a happier person... This little wish of mine looks simple and yet it seems like a little bit difficult to reach it. Hope I can achieve it everyday in Year 2013 :)

I wish to have more holidays and yet still have enough money to spend !

I wish my 2 boys can always be healthy and happy ^^

I wish for..... Alibaba can appear tomorrow morning at my house to grant me all my wishes! Hehe ....
